Pumpkin Protein Waffles with Cinnamon Syrup

Ingredients
Waffles
- 1 cup flour
- 1/3 cup vanilla protein powder
- 1/4 cup Argo® Corn Starch
- 1 tablespoon Argo® Baking Powder
- 2 teaspoons pumpkin pie spice
- 1/4 teaspoon salt
- 1 cup milk
- 2 eggs
- 1/2 cup pumpkin puree
- 2 tablespoons melted butter
- 1 teaspoon vanilla
- 1/2 cup Karo® Light Corn Syrup
- 1/4 cup brown sugar
- 1/4 cup water
- 1/2 teaspoon cinnamon
- dash salt
- 1 tablespoon butter

- For the Waffles

- Add all of the waffle ingredients to a blender and blend
until smooth. Scrape down the sides and blend once more to ensure that
all ingredients are incorporated. Heat a waffle iron and coat with
cooking spray. Cook the waffles until golden brown and serve with
cinnamon sauce and/or maple syrup, if desired.
- For the Sauce

- Add the corn syrup, brown sugar, water, cinnamon and salt to
a saucepan. Stir and cook over medium-high heat, stirring often until it
reaches a boil. Let the syrup boil for 2-3 minutes. Remove from the
heat and stir in the butter. Let cool for 10 minutes to thicken a bit
before serving.
