Pumpkin Protein Waffles with Cinnamon Syrup

Ingredients

Waffles

  • 1 cup flour
  • 1/3 cup vanilla protein powder
  • 1/4 cup Argo® Corn Starch
  • 1 tablespoon Argo® Baking Powder
  • 2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup milk
  • 2 eggs
  • 1/2 cup pumpkin puree
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla
  • 1/2 cup Karo® Light Corn Syrup
  • 1/4 cup brown sugar
  • 1/4 cup water
  • 1/2 teaspoon cinnamon
  • dash salt
  • 1 tablespoon butter

Directions

  1. For the Waffles
  2. Add all of the waffle ingredients to a blender and blend until smooth. Scrape down the sides and blend once more to ensure that all ingredients are incorporated. Heat a waffle iron and coat with cooking spray. Cook the waffles until golden brown and serve with cinnamon sauce and/or maple syrup, if desired.
  3. For the Sauce
  4. Add the corn syrup, brown sugar, water, cinnamon and salt to a saucepan. Stir and cook over medium-high heat, stirring often until it reaches a boil. Let the syrup boil for 2-3 minutes. Remove from the heat and stir in the butter. Let cool for 10 minutes to thicken a bit before serving.
